3 eggs 1 3/4 cup sugar 1 cup oil 1 T vanilla extract 2 cups zucchini (unpeeled and ground up) 1 T grated orange peel 3 cups flour 1 tsp salt 1 tsp baking soda 1/4 tsp baking powder 2 tsp cinnamon
Beat eggs until fluffy. Add sugar to eggs and mix. Stir in oil, vanilla, zucchini, and orange peel. Then stir in flour, salt, baking soda, baking powder, and cinnamon. Pour into 2 loaf pans (greased and floured well). Bake at 325 º for 50-60 minutes until nice and brown.
