3/4 lb. boneless, skinless chicken breast, cut into thin slices
2 T soy sauce
1 package Rice A RoniŠ Chicken and Broccoli mix
1 3/4 cups water
2 T peanut butter (chunky)
2 tsp. garlic powder
1/2 cup red pepper strips (optional)
1/2 cup shredded carrots

Directions:
Directions:
Toss chicken with soy sauce. Set aside. In large skillet over medium heat, saute rice mix according to package directions.

Slowly stir in water, seasonings, peanut butter, and garlic. Stir in chicken. Bring to a boil. Cover; reduce heat to low. Simmer for 12 minutes.

Stir in bell pepper and carrots; return to a simmer. Cover and simmer for 3-5 minutes until vegetables are tender. Stir and let stand for 3 minutes.
