8 potatoes- boiled, peeled, and diced
1/2 lb. velveeta diced
1 cup mayonnaise
1/2 cup chopped onion or 1 T dried onion
salt and pepper to taste

Directions:
Directions:
Boil and peel potatoes. Toss ingredients together. Put in buttered dish (9 x 9). Top with bacon bits (optional). May be refrigerated or bake immediately at 325 for 1 hour or until bubbly.
