1/2 tsp. crushed red pepper
2 tbsp. sugar
1/4 tsp. red chili flakes
juice from 1/2 lemon
1/4 c. water
1/4 c. plus 2 tbsp. soy sauce
2 tbsp. salad oil
1 tbsp. red wine vinegar
1 tbsp. sesame oil

SALAD:
1 lb. penne pasta-cooked, drained and cooled

1 red pepper-thinly sliced

FOR GARNISH:
sliced grilled chicken
cilantro
tomatoes

Directions:
Directions:
Mix together Peanut Sauce ingredients. I usually don't put in as much red pepper and chili flakes as called for. It can be very spicy. Blend it well in a food processor or in a large bowl with an electric mixer. It needs to be well mixed. The texture will be like watered down peanut butter.

Next, in a separate bowl, mix together salad ingredients. Toss salad with peanut sauce. Garnish with grilled chicken, tomatoes, and cilantro. (You can also try other veggies or cube more chicken for the salad.)

This is the salad I brought to Sarah's bridal shower. It's a great summer dish.
