1 c. butter, softened
1 c. vanilla yogurt
1 egg
1/2 tsp. vanilla extract
3 c. flour
3 tsp baking powder
1/2 tsp. salt
1/2 tsp. baking soda

Preheat Oven to 400º.

In a bowl, stir together butter, yogurt, egg and vanilla until well blended.

Add flour, baking powder, salt and soda, stir until all dry ingredients are incorporated.

Drop 1/2 c. amounts onto a baking sheet and bake for 12-15 minutes, or until golden.

Fruit Scones: Add 1 cup chopped dried fruit of your choice OR 1/2 c. jam or preserves to the wet mixture. (I have also had success with fresh apple and banana)

Herb or Spice Scones: Add 3-4 T of herb or spice of your choice to the wet mixture.

Floral Scones: Add 1/2 cup finely ground rose, lavender or other eatable flowers.

You can add up to 1/4 cup white sugar to the original or variations, if you wish to have a sweeter scone (recommended for many spices).
