1 c. butter, softened or melted
1/2 c. powdered sugar
1 TSR. vanilla extract (optional)
2 1/4 c. flour
1 TSR. salt
3/4 c. finely chopped pecans

Directions:
Preheat oven to 400º
In a medium bowl, mix butter, powdered sugar and vanilla extract until smooth. Stir in chopped pecans. Add flour and salt, stirring until completely blended. Roll into balls (1-2"). or use a cookie scoop, and drop evenly spaced on to a baking sheet. Bake for 10-12 minutes or until golden brown and firm. Roll in powdered sugar if desired.
Cool completely and dust with more powdered sugar.

I prefer mine without rolling or dusting with powdered sugar.

Variations: Substitute the following for the pecans.

Lavender: 1/8 c. plus 1 tsp. finely ground lavender buds.
Rose: 1/4 c. plus 1 tsp. finely ground rose petals.
Cardamom: 3-4 T ground cardamom and 3-4 T white sugar.
Ginger: 3-4 T ground ginger and 3-4 T white sugar.
Apple Pie: 3-4 T apple pie spice blend and 2 T packed brown sugar.
Pumpkin Pie: 3-4 T pumpkin pie spice blend and 2 T packed brown sugar.
