7 medium potatoes (about 2 lbs.)
1/4 c. butter or margarine, melted
1 small onion, chopped
1 tsp. salt
pepper
1 8oz carton sour cream
1 can (10 3/4 oz) cream of chicken soup
2 c. shredded cheddar cheese
3 T. butter or margarin, melted
1 1/2 - 2 c. herb seasoning stuffing mix

Directions:
Directions:
Peel and cut potatoes into 1/2-inch strips; set aside. Combine 1/4 c. melted butter, onion, salt and pepper, sour cream, and soup in a bowl. Lightly butter inside of 5-quart crock-pot and place potatoes inside. Mix cheese with potatoes. Pour sour cream/soup mixture into potatoes and mix well. Cover top of potatoes mixture with the stuffing mix and drizzle with 3 T. melted butter. Cover and cook on LOW for 8-10 hours or on HIGH for 5-6 hours or until potatoes are tender.
