6 boneless chicken breast, cut in half and butterfly it thick and pound to a thinness that you can still work with.

Stuffing:
2 Tbsp butter
2 large cloves garlic, minced or squeezed in garlic press
1 small onion, finely chopped
8 oz. cream cheese
1 Tbsp chopped fresh tarragon
1 egg yolk
pinch of grated nutmeg
salt and freshly ground black pepper to taste

Bacon

Directions:
Directions:
Melt butter in saucepan, add onion and garlic and cook to soft stage. Let cool. Add cream cheese and remaining ingredients to onion and garlic. Stuff breasts and wrap in bacon.
Bake at 375º for 25-30 minutes or until bacon is brown and crisp. Serves 6.

I'm not really sure where Mom got this recipe from, I believe she created it herself. UPDATE 2023: Mom got this recipe from Diane, our favorite girlfriend of Bill’s. (Bill Wade, Homer’s son).
