1 pkg prozen cooked squash
1/4 lb (l stick) melted butter or margarine
2 c. nonfat milk
2 very large or 3 small eggs
1/3 c sugar
1/2 c. flour or matzo cake meal
Dsah of salt, pepper, cinnamon

Directions:
Defrost and drain the squask. Add melted butter and mix. Add sugar and seasonings. Beat the eggs with the milk and add to squash mixture. Add the flour. Pour into greased 2 qt. souffle and bake at 350º for 55 mins.

You may double the recipe for larger souffle. Baking time is longer. Ilene doubled the recipe and used 5 eggs and a little less butter.
