"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Ben's Breakfast Casserole, by Nadine Ries, is from The Haun Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 (24 oz) bag shredded hash browns 2 cups shredded cheddar cheese 2 cups shredded Swiss cheese 3/4 cup half & half (I use milk) 1/2 cup butter 2 cups ham, turkey, or sausage 6-8 eggs 1 tsp seasoning salt (Lawry's)
Thaw and drain hash browns. Put into a 9x13 pan. Brush with melted butter and bake at 425º for 25 minutes or until potatoes start to brown. Spread cheddar cheese on top. Top with cooked meat and sprinkle with Swiss cheese. Beat eggs with half and half and seasoning salt. Pour over cheese mixture and bake in 350º oven for 35 minutes. Let stand for 10 minutes before serving.
