2 c flour
2 1/2 c sugar, divided
4 tsp baking powder
1 c milk
2 tbsp vegetable oil
2 cans ( 14 1/2 oz each) water packed pitted tart red cherries, well drained
2-3 drops red food coloring if desired
1/8 tsp almond extract

Directions:
Directions:
In bowl, combine flour, 1 cup of sugar, baking powder, milk and oil. Pour into greased shallow 3 qt baking dish. In another bowl, combine cherries, food coloring and extract and remaining sugar and spoon over batter. Bake 375 for 40-45 minutes or until wooden pick inserted in middle comes out clean. Serve warm with whipped cream or ice cream
