3 eggs
1 c vegetable oil
2 c sugar
1 tbsp vanilla extract
2 c of shredded and peeled zucchini
2 1/2 c all purpose flour
1/2 c baking cocoa
1 tsp salt
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp baking powder

Directions:
Directions:
In a mixing bowl, beat eggs, oil, sugar, and vanilla. Stir in zucchini. Combine dry ingredients; add to zucchini mixture and mix well. Pour into 2 greased 8x4x2" loaf pans. Bake at 350º for 1 hour or until toothpick comes out clean when stuck in center of bread. Yield: 2 loaves
