3 c all-purpose flour
2 c sugar
1 tsp soda
1 tsp salt
1 tsp ground cinnamon
1 tsp chopped nuts
3 eggs beaten
1 1/2 c vegetable oil
2 c mashed ripe pineapple, drained
2 tsp vanilla extract

Directions:
Directions:
Combine dry ingredients, stir in nuts and set aside. Combine remaining ingredients; add to dry ingredients, stirring just until moistened. Spoon batter into 2 greased and floured 9x5x3 inch loaf pans. Bake at 350º for 1 hour and 5 min or until done. Cool for 10 min before removing from pans. Remove to wire racks, cool. Yield: 2 loaves
