2 eggs
1 c. sugar
2 Tbsp margarine
2 Tbsp flour
1 tsp vanilla or lemon
1 1/2 c. potatoes mashed (no lumps)
1 1/2 c. milk

Directions:
Directions:
Mix together eggs, sugar, margarine, flour and vanilla and lemon. In a large bowl mix the potatoes and milk. Add the first mixture to the potatoes and mix well. Pour into 9-inch unbaked pie crust. Bake at 450º for 10 minutes then reduce heat to 350º until knife inserted in the middle comes out clean. Optional: Sprinkle top with nutmeg before baking.
