1/4 cup olive oil
1/2 stick butter
2 onions. chopped
1/2-1 bell pepper, chopped (or to taste)
4 lbs. red potatoes (any potato will work, MG prefers red)
1 Tbsp. dried parsley or 3 Tbsp. fresh
Salt & Pepper to taste

Directions:

Cover bottom of large frying pan with olive oil.
Add butter.
Add chopped onions and bell peppers, sauté about 5 minutes.
Cut potatoes into small chunks and add to pan.
Add parsley, salt and pepper.
Cook over med-high heat, stirring occasionally, until potatoes are cooked.
To cook quicker, cover to steam. Serves 8.

I have been making this recipe for years. They are delicious and can be served with breakfast, lunch or dinner. Can fry up bacon ahead of time and use some bacon grease in place of the oil. Then crumble bacon in at the last minute.
