3/4 cup sugar
1 envelope un-flavored gelatin plus 1/4 tsp.
1½ cups water
1 cup sour cream
1½ tsp vanilla or almond extract
1 8oz. cool whip, thawed
Fresh fruit of choice

Directions:
Directions:
In saucepan, heat water, gelatin and sugar, over medium heat until gelatin and sugar dissolve. DO NOT BOIL. Remove from heat. Cool slightly. Blend in sour cream and vanilla.
Chill until slightly thickened, about 30 minutes.
Fold in thawed cool whip.
Pour in to 1 quart mold (or a 9x9” square pan or individual cups) Refrigerate for at least 4 hours until firm. (Overnight is best).
Serve with fresh cut fruit on top each piece, if desired. Serves 8.
