1 lb. lasagna noodles
1½-2 lbs. ground beef
3 lbs. ricotta
3 eggs (every lb of ricotta, gets one egg)
1 lb. mozzarella cheese, shredded
1½ Tbsps. fresh parsley or can use dried
1 tsp. nutmeg
3 Tbsps. grated parmesan or romano cheese
Salt/Pepper to taste

Cook noodles al dente, according to its package directions, drain under cold water.
Cook ground beef and drain off
oil.
After ground beef has cooled, add some tomato sauce to coat ground beef.
Mix ricotta, mozzarella, eggs, parsley, nutmeg, grated cheese, salt & pepper with spoon.
Ladle some sauce on bottom of a 9x13” baking dish. Next lay 1/3 of the noodles,
then an even layer of 1/2 the ricotta mixture over the noodle, then an even layer of 1/2 of the beef mixture over top of the ricotta layer. Repeat with noodles and so on one more time.
Cover with remaining noodles. Add more tomato sauce on top.
Bake 375º for 45 minutes. Serve with more tomato sauce and grated cheese, on the side. Serves 10-12
