Sift flour, sugar, baking powder, soda, cinnamon, and salt into large mixing bowl. Add oil, eggs, carrots, pineapple and vanilla. Beat 2 minutes at medium speed. Bake in greased & lightly floured 13 x 9 pan in 350º oven about 35 min or till done. Cool and frost with Cream Cheese Frosting.
