1c. boiling water
couple pinches of salt
1/2c. butter or margarine melted
1c.+ 3T. sifted flour
3 eggs + 3 egg yolks
2c. milk
3/4c. sugar
1T. corn starch
1 tsp. vanilla

Directions:
Directions:
Add salt and butter to boiling water. Stir over medium heat until mixture boils. Lower heat, add 1c. sifted flour all at once. Stir until mixture forms a ball in the center of pan. Remove from heat.
Add one egg at a time, beating after each addition, until the dough is smooth and glossy.
Place foil on cookie sheet, drop 1 full teaspoonful of mix and shape round. (Place 6 across. and 8 down.) Bake at 450ºF for 20 minutes, then reduce heat to 350ºF for 15 or 20 minutes. Cool.
Prepare the custard filling. Warm the milk in a saucepan. Combine sugar, 3T. flour and cornstarch, and add to warm milk. Beat 3 egg yolks and add to the saucepan, cooking custard mixture until it coats the spoon. Cool and beat occasionally to prevent crusting. Stir in vanilla.
Make a slit near base of each puff and fill with custard.
Sprinkle top with confectioner's sugar.
