1/2c. unsalted shelled pistachios
1/3c. fresh whole wheat breadcrumbs
2T. freshly grated Parmesan
1/2 tsp. coarse salt, more to taste
1/8 tsp. pepper, more to taste
2T. olive oil
4 cod fillets, loin is best (4-6oz. each)
2T. Dijon mustard

Heat oven to 425ºF.
Line a small baking sheet with foil and grease lightly.
Chop nuts medium-fine, combine with breadcrumbs, Parmesan, salt and pepper in a shallow bowl. Drizzle with the olive oil and toss with a fork until crumbs are evenly moist.
Spread the top of each fillet evenly with the mustard. Press the mustard-coated side of each fillet into the crumb mixture to generously coat the fish (pile it on!). Set the fillets, coating side up, on the prepared pan.
Bake until the topping is crisp and browned and fish is cooked through, about 10-12 min.
Serves 4.
