Butter Almond Mini Loaves Recipe

4 c. sugar
4 eggs(large or extra large)
4 c. flour
4 t. vanilla
4 t. almond extract
1/2 t. salt
1 lb (4 sticks) butter - melted
1 c. sliced almonds or chopped almonds
sugar for garnish

Mix first set of ingredients - do not overmix (it is gooey not fluffy)
Divide into 20 mini-loaf pans.
Sprinkle tops with almonds.
Sprinkle tops with sugar.
Bake at 350 for 28 minutes- do not overbake!
Keep airtight. Top with whipped cream, if desired.
