2 T. butter 2 T. flour ½ tsp. Salt 1 c. milk ½ lb. Cheese, grated May add a little dry mustard
Heat butter, flour and milk, stirring with a whisk constantly until thickened and boiling. Add cheese and continue to stir until melted. Serve over cooked vegetables or baked potatoes. Variation: add cooked broccoli and ham.
