6 T. butter
2 cloves garlic, minced
1 tsp. Dried oregano leaves
8 large potatoes.
Salt and freshly ground black pepper
Fresh herb springs
Parsley
Mrs. Dash

Directions:
Directions:
Heat oven to 400º. In small saucepan over medium high heat, melt butter. Add garlic and oregano. Cook 5 minutes, stirring frequently until garlic is golden. Remove from heat, set aside. Using sharp knife, make deep diagonal cuts in each potato, spacing about 1/4 “ apart and cutting to within about ¼” of bottom. Arrange potatoes in 9 x 13 pan, roast 45 minutes until tender, brushing frequently with butter mixture. Season with salt and pepper.
