1 beaten egg
3/4 c soft bread crumbs (1 slice) or 1/4 c fine dry bread crumbs
1/4 c milk, beer, apple juice or water
1/4 c finely chopped onion
1/4 c finely chopped celery, green sweet pepper or shredded carrot or one 2-oz can mushrooms, drained and chopped
2 tbsp snipped parsley
1/2 tsp dried sage, thyme, basil or oregano
1 lb ground beef or ground lamb
1 tbsp bottled barbecue sauce, chili sauce or catsup

Directions:
Directions:
In a mixing bowl, combine egg, bread crumbs; milk, beer apple juice or water; onion; celery, pepper, carrot or mushrooms; parsley; sage, thyme, basil, oregano.
In a shallow baking dish pat mixture into a 7x3x2-inch loaf.
Bake in a 350-degree till pink remains. Bake for 25 to 30 minutes. Transfer to a platter
Top with barbecue sauce, chili sauce or catsup.

Michael's mom, Meg, made this for us when she was in Houston for Zoe's birth. It was the best meatloaf I've ever had, so we made sure it was added to this cookbook.
