Chicken Rice Gumbo Recipe

2 chicken breast, boiled
3 pieces fried bacon
bell pepper, chopped
onion, chopped
okra, sliced
1 can 14 oz. diced tomatoes w/juice
1 pkg. Pioneer chicken gravy mix
1/2 cup rice
chicken broth
Tony Chachere's Creole seasoning
salt and pepper to taste

Fry bacon, drain, crumble then set aside and use bacon drippings to saute bell pepper, onion and okra. Add tomatoes w/juice and chopped chicken. Dissolve gravy mix w/chicken broth and add to gumbo. Cook rice in chicken broth and add in to gumbo mixture. As it thickens, add more broth as needed to get the consistency you like. Add the crumbled bacon. Season with salt and pepper and Tony Chachere's creole seasoning.
