4 chicken breast filets, skinned
1 1/2 cup fresh white bread crumbs
1/2 cup finely grated parmesan cheese
2 T chopped fresh parsley
2 eggs, beaten
4 T butter, melted
Salt and pepper



1/2 cup mayonnaise
1/2 cup plain yogurt
1-2 garlic cloves, crushed

Chicken:
1. Cut each chicken filet into 4 or 5 large chunks. Mix together the bread crumbs, parmesan cheese, parsley and salt and pepper in a shallow dish.
2. Dip the chicken pieces in the beaten egg, then into the bread crumb mixture. Place a single layer on a baking sheet and chill in the fridge for at least 30 minutes.
4. Preheat the oven to 350º. Drizzle the melted butter over the chicken pieces and cook for about 20 minutes, until crisp and golden. Serve the chicken with the garlic mayonnaise dip.

Garlic Mayonnaise:
1. Mix the mayonnaise, yogurt, garlic and pepper to taste. Spoon into a serving bowl. Chill in the fridge until ready to serve.
