8-10 large eggs
3-4 flour tortillas
lots of grated cheese
1/2 to 3/4 c. salsa or picante sauce
sour cream

Directions:
Directions:
Break eggs into bowl, mix with salsa or picante sauce and grated cheese. With a pizza cutter,slice tortillas into narrow strips (approx. 1/2 in. wide). Add to egg mixture and stir around for a minute or so. Pour onto hot frying pan and scramble/cook until done. Season to taste with salt and pepper. Serve hot with a dollop of sour cream and extra salsa if desired.
