4 c. chicken broth
6-7 diced potatoes
3 T. butter
Bay leaves
Rosemary
Bouquets Garnis, optional
Salt and pepper to taste
2 c. water
2-3 stalks celery
2 medium onions
½ c. cream
2 c. cheese

Directions:
Directions:
Saute onions and celery in butter until soft. Put broth, water and spices in stock pot with potatoes and bring to a boil. Put onions and celery in potatoes and seasoning. Simmer until potatoes are done but not overcooked. Take out bay leaf and bouquets garnis. Mash potatoes with masher. Add cream, cheese, salt, pepper. Stir and adjust seasoning.
Top with parsley and more cheese.
