1 Pre-made pie shell. I prefer Marie Callendars

1½ c grated swiss cheese
¼ lb button mushrooms
½ small chopped onion
Pinch of minced garlic
5 - 6 slices cooked crumbled bacon
4 eggs
1½ c milk
3 Tbsp flour
¼ tsp dry mustard
¼ tsp salt
Shake of Mrs. Dash
Pinch of paprika
2 handfuls of fresh spinach, chopped

I pre-heat my oven at 375º and pre-bake my pie shell for about 5 minutes just until the bottom puffs a little. I then sautee onions, mushrooms, and spinach and garlic in 2 - 3 Tbsp butter. I then salt with Johnny's Season salt. In the pre-made crust place some swiss cheese on the bottom, then the onion, spinach, mushroom combo, swiss cheese, bacon crumbles, swiss cheese. Mix eggs and flour and mustard and pour into the pie shell filling almost to the top. Enough so the mixture is covered. Pour quickly after mixing so the flour does not settle on the bottom of the bowl. You will have some extra egg mixture just discard that. Sprinkle the top with paprika for color. Bake at 375 º for 40-45 minutes or longer depending on altitude. The best way to know if this is done is when the quiche puffs up. You can also do a touch test in the center for firmness. I put tin foil on top so the crust does not get too brown. The puff test is really the best way to know if it is done. It will fall when you take it out so don't worry.

This is great for dinner or for a brunch. I serve it with fruit and muffins. It really is pretty. You can make in a Cheddar Cheese and ham version. You use cheddar cheese and a little swiss mixed in. I then use diced ham and some green onions. Layer like above and use same recipe for egg mixture. It is also very good if some do not like spinach and mushrooms.
