2 1/2 - 3 cups drained black beans
3 scallions, chopped
3 plum tomatoes, chopped
1/2 yellow pepper, chopped
1/2 cup drained corn
3 tablespoons cilantro, chopped
3 - 4 tablespoons olive oil
3 tablespoons lemon juice
3/4 teaspoon salt
1/2 cup salsa

Directions:
Directions:
Combine all ingredients in a bowl and mix thoroughly. Cover loosely with Saran Wrap and refrigerate for 1 hour. Serve with tortilla chips.
