1lb. 90%-lean beef chopped meat
3 eggs
1 minced garlic clove
1/2c. Italian bread crumbs
3T. grated Pecorino Romano cheese
1 tsp. chopped fresh parsley
2T. olive oil

Directions:
Directions:
Mix all the ingredients thoroughly (except the olive oil) with hands.
Heat olive oil in a frying pan. When oil is hot, take a small portion of meat, form a firm ball (about 2" round) and put in frying pan. Fry until that side is brown, turn onto the other side to brown. Continue until you have made all the meatballs.
Place fried meatballs on paper towel to drain, pat gently with paper towel and cook in gravy for approximately 1 hour.
