1/4 cup water
1 cup sugar
1/2 teaspoon cinnamon
1/8 teaspoon cream of tartar
1-1/2 cups walnut halves
1/2 teaspoon vanilla extract

Directions:
Directions:
Bring the water to a boil. Add the sugar, cinnamon and cream of tartar. Stirring occasionally, boil to 240º on a candy thermometer. Remove from the heat and add the walnuts. Stir in vanilla and continue stirring until all of the nuts are coated and mixture has sugared completely. Remove the walnuts and arrange in a single layer on a cookie sheet. Cool for 1 hour and store in an airtight container.
