1/4 tsp. mince garlic
1 1/2 tsp. minced shallot
2T. Dijon-style mustard
1/ c. honey
1/4c. red-wine vinegar
1/2c. olive oil
1 lb. fresh spinach
1/2 lb. cooked bacon, crumbled
1c. pecans

Directions:
Directions:
Whisk together the garlic, shallot, mustard, honey, and vinegar in a small saucepan. Add the oil in a stream, whisking until it is completely mixed. Heat the dressing over moderate heat until it is warm. Toss the spinach, bacon, pecans and dressing in a large bowl and serve warm.
