1 egg
1 cup milk
1 Tbsp. cooking oil
1 cup flour
1 tsp. baking powder
1/4 tsp. salt
3 onions
Oil for frying
Salt, if desired

Directions:
Directions:
In medium bowl, combine egg, milk and 1 T. cooking oil. Add flour, baking powder and salt. Beat until smooth. Peel and slice onions in ¼ inch thick slices; separate into rings (I always soak the cut rings in lightly salted cold water for approximately 1 hour; drain and dry on cotton towel). Dip rings in batter; fry in hot oil until golden. Drain; sprinkle with salt, if desired. Serve hot.

I made these once when Aunt Grace came to visit and she thought they were delicious. She took the recipe home with her and now everyone calls them Katie's Onion Rings.
