Ingredients:  
1 package fresh spinach
1 large red onion, sliced into rings
1/2 lb. mushroonms, sliced
2 large red leaf lettuce heads
1/2 lb. bacon, fried and crumbled
1 c. grated Swiss cheese

Dressing:
1 c. salad oil
1 1/4 c. sugar
2 tsp. prepared mustard
dash of salt
2/3 c. apple cider vinegar
2 green onions
3 T. poppy seeds

Directions:
Directions:
Break lettuce into pieces, and remove stems from
spinach. In a blender, mix all of the ingredients for the
dressing together and process until all of the onion is
chopped up. Toss together the greens, onion,
mushrooms, bacon and cheese. Sometimes I add
sliced hard boiled eggs and omit the cheese. Drizzle on
the Poppy Seed Dressing shortly before serving.
