1c. Bisquick 2/3c. grated Pecorino Romano cheese 2T. chopped parsley 1/2 tsp. oregano 4 eggs 1/2c. vegetable oil 3 large or 4 small very thinly sliced zucchini (skin off) 1/2c. minced onion 1 chopped garlic clove
Mix Bisquick, cheese, parsley, oregano with fork. Stir in eggs and oil (to mix). Fold in zucchini, onions & garlic. Spread batter into greased 13" x 9" pan. Bake uncovered in 350ºF oven for approximately 1 1/2 hours or until zucchini is brown. Cut in brownie size pieces and serve.
