3 T. unsalted butter
1 large onion, finely chopped
1 medium celery rib, finely diced
1 medium green pepper, finely diced
1 t. thyme
2 lbs. lean ground beef (sirloin)
1/2 cup rolled oats
2/3 cup ketchup
2 eggs, beaten
2 t. salt
1.5 t, pepper
3 slices bacon, halved crosswise

In a large skillet, melt butter over moderate heat. Add onion, green pepper, celery and thyme. Reduce heat to low and cook covered stirring once or twice until vegetables are soft, about 20 minutes. Remove from heat; cool to room temperature. Preheat oven to 350º. In a large bowl, combine cooked vegetables and the beef. Add oats, 1/3 cup of ketchup and eggs, salt and pepper; mix well. Spoon meat mixture into a shallow baking dish. Form meat into a flat round loaf about 2 inches high and smooth the top with back of spoon. Spread remaining 1/2 cup ketchup over loaf, arrange bacon strips on top. Bake 1 hour, or until it shows not traces of pink. A thermometer will register 145 degrees. Let stand 10 minutes before slicing, so juices stay in.
