1/2 cup fine graham cracker crumbs
1 tablespoon sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
Filling
1 3/4 cup sugar
3 tablespoons all-purpose flour
3/4 teaspoon salt
3/4 teaspoons each grated orange and lemon rinds
5 - 8 ounce packages of very soft cream cheese
6 eggs
1/2 cup heavy cream
1/2 teaspoon vanilla extract
Topping
1/2 pint (1 cup) sour cream
1/4 cup toasted slivered almonds
Fruit or fruit pie filling of choice

Crust:
Before forming crust wrap outside of pan well with heavy duty aluminum foil (to form a water proof outside pan.) Blend all ingredients. Toss mixture on bottom and sides of greased 9 inch spring form pan. Press as necessary to form crust.
Filling:
Mix sugar, flour, salt, rinds together and gradually blend into cream cheese with electric mixer. Beat until smooth and light. Add eggs, one at a time, beating well after each addition. Blend in cream and vanilla. Pour into prepared pan. Bake in a water bath in slow oven (325 º) for 60 to 70 minutes or until set. Let cool in oven if not adding topping. If adding topping, reset oven to 425º and follow topping directions.
Topping (if desired)
Spread sour cream on hot cake. Sprinkle with almonds. Return to oven for 5 minutes. Remove to cooling rack. Chill before removing from pan. Garnish with fruit of choice or cherry or blueberry pie filling.
