CAKE

1 cup Wesson oil
2 cup sugar
3 eggs
2 cup zucchini grated unpeeled
2 cup flour
1/4 tsp salt
1 1/2 tsp baking powder
1 tsp cinnamon
3/4 tsp soda
1 tsp vanilla


FROSTING

1 8 oz package cream cheese, softened
1 stick oleo softened (1/2 cup)
1 tsp vanilla
about 1/2 cup powdered sugar (enough to spread)

Directions:
Directions:
Mix with electric mixer the oil and sugar. Add the eggs one at a time and mix well. Add the zucchini. Sift together the flour, salt, baking powder, cinnamon, and soda and add to mixture. Add the vanilla and stir in. Pour in greased and floured pan and bake in 350 oven for 35 to 40 minutes. Make frosting by mixing softened cream cheese, softened oleo, vanilla and enough powdered sugar to make a mixture that can be spread over the cake.
