2 lbs. lean ground beef
1 cup chopped onion
2 tbls. oil
1 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 (15 0z.) can diced tomatoes
1 (8 oz.) can tomato sauce
1-1/2 cups elbow macaroni
2 cups water
1 tsp. salt or to your taste
Freash ground black pepper
Parmesan cheese

I a large skillet or Dutch oven that has a lid, on med. heat add oil and then brown onions about 2 min. Add bell peppers and cook another minute. Add ground beef and with a spoon stir and break into small bits. Cook until the meat is well done. I there is a lot of fat drain. Add tomatoes, tomato sauce, water, macaroni, salt and pepper. Cover with the lid and cook about 30 minutes before serving. This really helps blend all the flavors. Sprinkle with the Parmesan cheese.
