2 ripe mangoes, peeled/med diced
1 green onion, thin sliced
1 tbsp grated fresh ginger
1 tsp basil or parsley
1 kiwifruit, peeled/med diced
1/2 c diced red sweet pepper
1 tbsp brown sugar
1 tbsp lime juice
1 med jicama
dash ground red pepper

Mix above ingredients except jicama. Toss to coat well, cover and chill for a few hours. For jicama chips, peel and halve jicama. Cut jicama into 1/4 inch slices with a very sharp knife
