2 Ibs. red potatoes,unpeeled
1/3 c. olive oil
1 env. Lipton onion dry soup mix

Directions:
Directions:
Scrub potatoes and cut into chunks. Put into gallon size freezer bag. Add olive oil and soup mix. Shake until well coated. Pour into a 9x13" casserole dish. Bake at 400 for1 hr.
