* 2 pounds washed & chopped~OR~
frozen & drained spinich
* 4 eggs
* 1/2 pound feta cheese/crumbled
* 1/2 pound cottage cheese
* 1 small onion/minced
* 1 TBSP. dried dill
* fillo dough {found in the frozen food section}
thawed
* 1/4 pound melted butter for brushing

*Heat the oven to 375.*Take some of the butter for brushing & coat the bottom of a glass 9x13 baking dish.*Begin to layer the fillo leaves one at a time 'til it's about 8 thick,brushing each layer with the melted butter.*Bake for a few minutes 'til the leaves are puffy & golden.*Combine all the rest of the ingredients together well & layer on top of the baked fillo leaves.*Top with another 8 layer thickness of the dough,brushing with the butter often & bake for 30 more minutes 'til the dough is golden & puffy.*Serve immediately.

Working with fillo dough is a challenge,to say the least! Keep it moist with a wet paper towel while assembling & don't be afraid to brush liberally with the butter. Dan says his girls LOVE this dish !
