Ingredients:	Ingredients: 8 oz. unsalted butter (softened) ½ c. powdered sugar 1 tsp. vanilla 2 c. flour 4 large eggs 2 c. sugar 1 T. finely grated lemon zest 6 T. lemon juice

Directions:	Directions: Set an oven rack on the middle level and preheat oven to 350º. Lightly grease a 9x13" baking dish and line it with oversized, buttered parchment paper or aluminum foil. Beat the butter at medium speed. Add the powdered sugar and vanilla and beat until light, 1-2 minutes. Reduce speed to low and beat in the flour. Pat the dough evenly over the bottom of the prepared baking dish. Bake for 20-25 minutes. In a large bowl, whisk the eggs just enough to break them up. Without overmixing, add the sugar, them the lemon zest and juice. As soon as the base is baked, pour the lemon topping over it and bake for 25-30 minutes, or until the topping is set. When completely cooled, remove by lifting the paper or foil to a cutting surface. Just before serving, dust with powdered sugar.
