1/4 cup Raspberry or white wine vinegar
5 Tbsp.extra virgin olive oil
1 tsp. honey
1/2 tsp. finely grated orange peel
1/8 tsp. salt
1/4 tsp. pepper
4 boneless chicken breasts
8-10 cups torn spinach or mixed greens
1 cup raspberries
1 mango, peeled, seeded and sliced

Directions:
Directions:
Combine vinegar and 4 Tbsp. oil, honey, orange peel, salt, and pepper. Cover and shake well. Chill.
Cook chicken in remaining oil. Turn chicken often to brown evenly. (you may use already cooked chicken) Cut chicken into bite size strips.
In large bowl, toss together chicken and greens. Just before serving, add raspberries and mango. Shake dressing and pour over all. Mix and enjoy!
