1 1/2 cup gold raisins
Juice of 2 oranges (2/3 cup)
3 cup flour
1 1/2 tsp salt
1 T baking powder
1 tsp baking soda
3/4 cup sugar
1/4 cup canola oil
1 3/4 cup buttermilk
1 beaten egg
2 egg whites
1/4 cup applesauce
2 T melted butter

Place raisins and orange juice in saucepan over low heat until raisins are plump -- combine dry ingredients and mix -- add drained raisins to those ingredients...Combine oil, milk, eggs, applesauce --add to the things already mixed together-- pour into pans or shape into loaf -- drizzle butter over top -- Bake at 350º for 60 minutes until golden brown...

Recipe says spray 12 or 14 inch round pan and line with wax paper -- or shape into round loaf on baking sheet -- I think it could also be put into loaf pans
