Banana Split Sundaes Recipe

3 1" thick slices angel food cake, torn into 1/2 to 1" cubes
2 T. Butter, melted
3/4 c. packed brown sugar
4 T. cornstarch
1/3 c. water
1/2 c. half and half
3 T. corn syrup
1 T. butter
1 1/2 tsp vanilla
2 bananas
1 1/2 pt. vanilla, chocolatee or strawberry ice cream

Preheat oven to 400º. Place cake cubes in an 8x8x2" pan. Drizzle with the melted butter and toss to coat. Bake, uncovered, for 10 minutes, stirring twice. Cool. The croutons will crisp as they cool.
For caramel sauce, combine brown sugar and cornstarch. Stir in the water. Stir in cream, corn syrup, and the 1 T. butter. Cook and stir over medium heat until bubbly. Mixture may appear curdled. Cook and stir for 2 minutes more. Remove from heat; stir in vanilla.
To serve, cut each banana in half both vertically and horizontally so you have 4 equal pieces from each. Place bananas in an even layer in the skillet, turning to coat with sauce. Cook for 1 to 2 minutes.
Scoop ice cream into 4 bowls. Top with bananas, cake croutons and the remaining caramel sauce. Serve immediately.
