* 4 pound beef arm~OR~blade roast
* 1 TBSP. olive oil
* 4 large onions/sliced
* 1 {15 ounce} can low sodium beef broth
* 1/2 cup beer~OR~apple juice
* 2 TBSP. brown sugar
* 2 TBSP. Dijon mustard
* 1 TBSP. cider vinegar

*Heat the oven to 325.*Spray an ovenproof Dutch oven & sear the roast on all sides 'til it's browned,sprinkle with salt & pepper while searing.*Reduce the heat & remove the roast & add the oil & onions.*Cook the onions 12 to 14 minutes,stirring often,'til they're browned,then stir in the rest of the ingredients, mixing well.*Return the roast to the pot,spoon the onion mixture over & around the roast.*Cover & bake 3 1/2 hours~OR~'til the beef is fork tender.
