Meat Mixture:

1 lb chuck
2 cloves minced garlic
1 T chopped parsley
1 T basil
1 1/2 tsp salt
3/4 tsp pepper
1/2 tsp oregano
1/2 tsp fennel seed
2 T sugar
1 can tomatoes (1 lb)
1 can tomato paste (6 oz)



Cheese Mixture:

2 well beaten eggs
2 tsp salt
1 1/2 tsp ground pepper
2 T chopped parsley
1/2 cup grated Parmesan cheese
2 cartons (12 oz. each) large curd cottage or ricotta cheese, drained


1/2 lb Mozzarella Cheese
Lasagna Noodles

Directions:
Directions:
Brown chuck slowly. Add meat mixture ingredients and simmer 45-60 minutes uncovered. Cook lasagna noodles adding 2 T olive oil. Combine cheese mixture ingredients. Layer noodles, cheese mix, mozzarella cheese and meat mixture - repeat -- bake at 375º for 30 minutes.

Next time I am going to try what David says Mary Belle does sometimes -- layering in spinach chopped and cooked a little bit in oil.
