3/4 cup brown sugar
1 egg
1/3 cup oil
1 tsp. vanilla
1 1/12 cups flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup half-and-half
1 cup finely chopped fresh rhubarb
1/4 cup chopped walnuts
Topping:
1/4 cup brown sugar
1/2 tsp. cinnamon
1 Tbsp. flour
1/4 cup chopped walnuts

Directions:
Directions:
In a medium bowl, beat brown sugar, egg, oil, and
vanilla. In a separate bowl mix flour, baking soda, and salt; add to creamed mixture and combine. Add half-and-half and mix until well blended. Stir in rhubarb and walnuts. Fill muffin cups two-thirds full. To make topping, in a small bowl, combine brown sugar, cinnamon, flour, and walnuts. Sprinkle over muffins. Bake 20-25 minutes at 350.
